What is the average loss on Angus Beef?

The yield is roughly 60% on black angus ( which I assume would be similar to red angus).

So a 1000 lb. Angus steer on foot should dress out to approximately 600 lbs.

Angus dress out better than most beef breeds due to its shorter legs and smaller bones in general.
