Dakotah Sausage Stuffer

We are a firm believer in "water powered" stuffers.  We believe it is the best way to stuff sausage and meat at home.
Here at our meat processing plant, Jackson Frozen Food Locker, we use a water powered stuffer to stuff our smoked deer sausage, bratwurst and
stuff ground beef and fresh pork sausage into "plastic" bags.

Our commercial Zuber water stuffer works on the exact same principle as the Dakotah Sausage Stuffer.  Ours is just vertical instead of horizontal, holds more sausage/meat and is made out of stainless steel.  And of course, the Zuber water stuffer cost considerably more than the Dakotah Sausage Stuffer!  A new Zuber stuffer runs around $4,000.00.

We only use Beef Top Round to make our Beef Jerky.  We feel that it is the best cut for jerky.  Below is a photo of 2 pieces of Beef Top Round.  Click on the photo to enlarge.

Below is a photo of the 1/4 inch thick strips of Beef Top Round with our Jerky Seasoning Sprinkled on.  We will let these strips set overnight in our cooler (36 degrees for a minimum of 15 hours). After this, we will place them in the smoker for drying.  Click on the photo to enlarge.

Sprinkling the Jerky Seasoning on the sliced beef top round.  Make sure to sprinkle the jerky seasoning on both sides of the meat.  Sprinkle to taste.  It might take some experimenting to find the exact amount to use for your personal taste.

By purchasing our Pre-Mixed Seasonings, you usually do not have leftover seasoning to get old.  This is the advantage of our Pre-Mixed Seasonings over buying individual spices - that you probably won't use up all the spices - as most recipes call for a teaspoon of this or a tablespoon of that.
