Legg's original "Southern Style" seasonings with generous levels of natural spices.  Also know as Old Plantation Seasoning.
Our most popular sausage seasoning. A true "Southern Style" seasoning. It has relatively high level of sage, red pepper and black pepper. Some red pepper is crushed to be visible in the finished product.

 Ingredients:  Salt, Red Pepper, Sage, Sugar and Black Pepper. 
8 oz. bags.  Each Bag correctly seasons 25 lbs. of meat.

  • Mix bags with 25-lbs. of meat. You can use 25 lbs. of lean pork (boneless pork shoulder butts will work if you can't purchase 80/20 pork trim from a butcher shop). Or you can use 22 lbs. of lean pork and 3 lbs. of lean beef. Empty entire bag of seasoning into the 25 lbs. of meat and mix thoroughly (it works best if you cut the meat into small chunks first). Then stuff the sausage into natural hog casings for links. Or you can package the sausage in 1 lb. bulk freezer bags.
  • Legg's exclusive high-barrier, multi-wall packaging protects the seasoning's freshness and flavor for at least 12 months

Ingredients:  Salt, Sodium Nitrite (6.25%), Red 3 (0.0018%) and less than 1% glycerine added to prevent caking

This is NOT a 4 oz. bag of pure sodium nitrite!

The primary and most important reason that meat is cured is to prevent BOTULISM POISONING. In simpler terms, food poisoning. It is of extreme importance that any kinds of meat or sausage that will be cooked and smoked at low temperature MUST be cured. To trigger botulism poisoning, the requirements are quite simple - lack of oxygen, moisture, and temperatures in range of 40-140° F. When smoking meats, the heat and smoke eliminates the oxygen. The meats have moisture and are traditionally smoked and cooked in the low ranges of 90 to 160° F.
As you can see, these are ideal conditions for food poisoning if you don't use cures.
